If you know me, you know my love for ice cream is strong! For years, the ingredients in ice cream were not a concern to me, except for the flavor! Then, as I learned about foods to avoid while living with fibromyalgia, I became FULLY aware of the amount of refined sugar my favorite sweet treat contained. Did I have to give up ice cream?
Not so fast… bananas to the rescue!
Okay, so I admit when I first heard about making ice cream with bananas, I was a bit skeptical. Homemade ice cream (made in an ice cream maker or the familiar camp tin can ice cream method) typically requires many ingredients and lots of time.
Ready for a scrumptious ice cream recipe to whip up at home without an ice cream maker? Have no fear… the recipe we're about to share has received approval from many dedicated ice cream fans. Plus, it's packed with protein, healthy fats, and dietary fiber!
Creamy Nut Butter Banana Ice Cream
Servings: 2
Time: 5 minutes
Ingredients:
2 Ripe Bananas, chilled and sliced
1/8 cup milk
1/8 cup nut butter
Directions:
Add bananas to the food processor or blender and blend for thirty seconds. Add milk and nut butter.
Occasionally scrape down the sides and continue to blend until smooth, approximately 3-5 minutes.
Scoop into a bowl and enjoy immediately as a soft serve!
For firmer ice cream, place in an airtight freezer-safe container and freeze for at least 1 hour.
Make it sweeter: Add 1 tbsp of honey or maple syrup when blending, or drizzle dark chocolate on top before serving.
Looking for a dairy-free option? Omit the milk and increase nut butter to 1/4 cup OR try it out with your preferred dairy substitute (like almond or oat milk).

Mint Dark Chocolate Chip
Servings: 2

2 Ripe Bananas, chilled and sliced
1/4 cup Fresh Mint, chopped
1/4 cup Organic Dark Chocolate, chopped

Strawberry
Servings: 2
Time: 5 minutes

2 Ripe Bananas, chilled and sliced
1 cup Strawberries, divided*
Directions:
Add bananas to the food processor or blender and blend for thirty seconds. Add 3/4 cup strawberries*.
Occasionally scrape down the sides and continue to blend until smooth, approximately 3-5 minutes.
Scoop into a bowl and enjoy immediately as a soft serve! For firmer ice cream, place in an airtight freezer-safe container and freeze for at least 1 hour.
*For some chunky strawberry ice cream, set aside 1/4 cup of chopped strawberries to add at the end
Green Tea
Servings: 2
Time: 5 minutes
Ingredients:
2 Ripe Bananas, chilled and sliced
1/2 teaspoon Green Tea Powder
Directions:
Add bananas to the food processor or blender and blend for thirty seconds. Add green tea powder.
Occasionally scrape down the sides and continue to blend until smooth, approximately 3-5 minutes.

Chocolate Banana Ice Cream

2 tablespoons Cocoa Powder*
Directions:
Add bananas to the food processor or blender and blend for thirty seconds. Add cocoa powder.
Occasionally scrape down the sides and continue to blend until smooth, approximately 3-5 minutes.
Scoop into a bowl and enjoy immediately as a soft serve! For firmer ice cream, place in an airtight freezer-safe container and freeze for at least 1 hour.
*For some chunky chocolate ice cream, mix in 1/4 cup of organic dark chocolate chips or chopped nuts
